Authentic Italian Cookies




A really simple recipe that takes around thirty minutes to prepare, this recipe is much loved in the Veneto but it is also common elsewhere in Italy.

Almonds are often not added in Veneto but I would suggest you use them if possible. In my opinion they make the recipe even tastier.

Ingredients

3 eggs

1/2 cup orange juice

1 cup sugar

2 1/2 sticks butter, melted

1 Teaspoon salt

1 tsp. vanilla extract

3 3/4 cups flour

2 tbsp. baking powder

Almonds chopped

Instructions

• In a large bowl, beat the eggs together with the orange juice, and sugar. Add butter and beat well then add the salt, flour, and baking powder, mix with a wooden spoon. Stir in the vanilla extract and chopped almonds.

• Shape dough into two separate rectangles and place on a well greased cookie sheet. Bake at 350 degrees F until golden (about 15 minutes). Remove from oven and let the cookies cool.

• Cut cookies into 1/2 inch thick pieces and re cook at 450 degrees F until golden on both sides.
